Don’t know what you will have to cook with but here are a couple ideas.
Hamburgers, hot dogs, Italian sausage, brats. Grill on an open fire and serve with buns and potato salad, coleslaw, jello,or pudding.
Feel more adventures try foil dinners. One sheet of foil. Diced raw potatoes, frozen corn, frozen peas, minced onion, and cut up pan steaks.. Place all on foil and fold to seal. Place on grill and turn frequently. When done open foil and put on plate.
My favorite is stew. Beef, pork, chicken, italian sausage, or a combination of all. Brown meat. In a large pot put meat, diced potatoes, corn, peas, carrots, stewed tomatoes, and a can of spinach. Put on fire and let cook till meat is fork tender. Now mix (Bisquick) with milk and place dollops on simmering stew.(Follow directions on box) Everybody loves this.
Quick meals include angel-hair pasta. It boils fast. Just add some pasta sauce and it will be perfect. If you’d like to get fancier, then add some sausage. It works every time!
Are you bringing a cooler and is the car near by? Then you can make almost anything you would at home. You’ll just need a nice set of coals on the campfire or a couple camp stoves. If you’re walking in a bit, and this is your first time camping, maybe just grab a few of your favorite canned soups/stews or pastas. If there’s a water source, anything in a pouch that’s boil and serve. Nix the margarine and milk.
But one thing I like to make, even when hiking in a couple miles, are chicken enchiladas. Bring a can of cooked chicken, a small can of tomatoes & chilis from the Mexican foods aisle at the grocery store, pre-cooked Spanish rice, non-perishable cheese, tortillas, and a few packets of salsa. Mix the main ingredients in a pot, slap it on some tortillas and you’re good to go. You can add dehydrated corn if you want.
