What would be some good vegetarian food to bring or cook while camping?

I’m going camping tonight with a vegetarian, and I was wondering what some good meal recommendations might be.

    Most tinned foods, beans and spaghetti are easy to transport. Simple packet pasta mixes, You’ve got to think about what you will be cooking with, I’m assuming a pot and water, maybe milk as well. Then think about how much you need and how it fits into your pack. Cereal is a winner on camps, light, filling and nutritious.

    You can do a lot of prep before you leave- if you are grilling you can cut up veggies such as zucchini, bell peppers, onions, tomatoes- for kabobs. You can also marinate portabella mushrooms and grill like hamburgers. You can make a chili with just beans and veg- that always turns out good, there is a can starter call Chili Magic that makes life very simple.

    Enjoy the wholesome goodness of some spit roasted carrots. They taste great and are good for you.

    lots of canned stuff. When I went camping we brought raw vegetables (squash, carrots, cucumbers, etc). I preseasoned them and put them in one of those lock and seal bags. My mom bought me a separate grill (for my food) and I grilled it. I would also grill a boca burger or pineapple with it.

    Wrap potatoes in aluminum foil and chunk them in the coals of the fire. Broccoli and cauliflower mixed with oil and herbs wrapped in foil on the fire is fantastic too.
